Top Mulberry Wine Recipes

Top Recipe for Mulberry Wine.

My grandmother taught me both these awesome mulberry wine recipes.

We would make it all the time and talk about the old times as we did. I learned so much from her.
You can find mulberries just before the 4th of July in the early summer.

Mulberry Wine Ingredients & Procedure:

Recipe One

  • 6 cups mulberries, fresh
  • 5 cups granulated sugar
  • 1 teaspoon yeast nutrient
  • 3 campden tablets
  • 1/2 teaspoon pectic enzyme
  • 1 package wine yeast
  • 1 gallon water

Recipe Two

  • 20 cups mulberries, fresh
  • 4 1/2 cups granulated sugar
  • 1 teaspoon yeast nutrient
  • 3 campden tablets
  • 1/2 teaspoon pectic enzyme
  • 1 package wine yeast
  • 1 gallon water

Note: use campden tablets 3 per gallon.

Try not to use overripe or spoiled berries as this might throw off the taste.
Soak the mulberries in a bowl of water for 20 mins to remove any insects.
Smash the berries and place in the primary glass wine fermenter.
Add the water, sugar, nutrients, pectic enzyme and crushed campden tablet.
Mix good to dissolve the sugars.
Let this sit overnight.
The specific gravity should be about 1.090 and 1.095.
Add the yeast to the mixture and stir.
Mix the blend daily for six days, until specific gravity is 1.040.
Strain the must from the mix and then squeeze out as much juice as you can.
Siphon the wine into secondary fermenter.
Place a airlock of your choice on.

For a drier wine, rack in three weeks, and every three months for one year. Bottle.

For a sweeter wine, rack at three weeks. Add 1/2 cup sugar dissolved in 1 cup wine. Stir gently, and place back into secondary fermenter.

Repeat process every six weeks until fermentation does not restart with the addition of sugar.
Rack every three months until one year old.
Bottle the mulberry wine.
Enjoy!
